  • Oversees the general operation and management of Prothro Dining Hall (board plan), Le Bistro and Vending
  • Supervises personnel matters, financial reports, budgeting, quality control, sanitation and customer satisfaction
  • Oversees and assists menu planning, purchasing functions and proper cooking procedures for the various units
  • Sets guidelines for quality control and proper sanitation procedures
  • Responsible for public relations with the college community and general public
  • Supervises a management staff of three professionals and an office staff of two
  • Oversees vending machine services

  • Assists the Director of Dining Services in the management of Prothro Commons (board plan)
  • Primary responsibility for the day-to-day operation of the production staff at Prothro Commons Dining Hall
  • Responsible for menu planning and production, staff training, purchasing of all food, planning and recipe development
  • Responsible for ensuring employees maintain proper food sanitation and quality and presentation of food

  • Responsible for maintaining the financial records of the Dining Services Department
  • Prepares monthly profit and loss statements for Dining Services departments and processes payables and receivables, petty cash accounts and imprest fund for purchase of alcoholic beverages
  • Assist the Director of Dining Services in maintaining Dining Services' overall financial stability

  • Responsible for the day-to-day office operation of the department
  • Maintains personnel records, payroll for all Dining Services departments and room reservations, and reconciles receipts from the sale of meals in Prothro
